Bibimbap

Ingredients: Makes 2-3 servings

  • 1 medium Zucchini, cut into bite size pieces
  • 8oz sliced baby bellas
  • Bag of baby spinach
  • ½ cup shaved carrots
  • ½ cup mung bean sprouts
  • 1 Tbsp sesame oil
  • Sriracha to taste
  • ½ Lb Korean BBQ marinated LEAN sirloin tips OR chicken breast (Korean BBQ sauce found in Asian section in the grocery store)
  • 1 cup cooked brown rice or sushi rice
  • 2 large Eggs
  • Black pepper to taste

Directions:

  1. Marinate steak tips or chicken breasts in Korean BBQ sauce for at least 24 hours (the longer the better)
  2. Grill, bake or broil the chosen protein and set aside
  3. In a wok or large fry pan, sauté the zucchini, mushrooms, baby spinach, carrots and bean sprouts in sesame oil until slightly tender.
  4. In the bottom of a bowl, add ½ cup cooked rice and top with the prepared veggies and protein.
  5. Pan fry 2 eggs over easy and place over the top of your prepared Bibimbap. Drizzle with a little Sriracha and black pepper to taste
